The Best Cookie[s] I Ever Ate

Hungry yet? Today I’d like to share my favorite cookie recipe with you. The recipe comes from my dear friend, Lara, and her mom, Becky.

Cranberry Oatmeal Cookies

1 ½ c. flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
2 ½ c. quick cook oatmeal
1 c. packed brown sugar
1 c. unsalted butter, softened
½ c. sugar
2 large eggs
1 Tbsp honey
2 tsp vanilla
1 1/3 c. craisins
1 c. white chocolate chips

Combine flour, baking soda, salt and cinnamon; stir in oatmeal. In separate bowl, beat butter and sugars with electric mixer at high speed until pale and fluffy. Beat in eggs, one at a time. Add honey and vanilla, beat until blended. Add flour mixture in 2 additions, beating until just combined. Stir in cranberries and white chocolate chips. Drop dough by heaping tablespoons about 2” apart on cookie sheets. I’ve found that using parchment paper greatly improves the quality of my baked goods and prevents my cookies from getting burned on the bottom. Bake at 350 for 9-11 min.
